Elizabeth’s Story

I am a mom to two girls (14 and 11) and wife to Steven. Before having our oldest, we struggled with infertility. During that time, I scoured the internet to learn anything that I could find about how to eat, foods to avoid, supplements to try, etc. I worked to perfect my body in hopes that it could be the magic bullet to achieve pregnancy. This process felt impossible and entirely overwhelming, but it certainly didn’t stop me from trying. Finally, after many doctor visits, prayers, and struggles, we were blessed with our oldest baby girl. My dreams had come true. And then we discovered she had a dairy intolerance. Thus began another nutrition journey to learn how to eat to protect her tummy. 

As I continued to walk through this challenge of nourishing mine and my child’s bodies, I realized that nutrition was so much more complicated than I had at first believed. To fill my love for learning, I sought how to learn as much as possible about food and nutrition and health. I returned to school to study for my Bachelor’s in Food and Nutrition, and then a Master's in Nutrition Science. I then worked through a Dietetic Internship and finally achieved my goal to become a Registered Dietitian.

This experience of higher learning gave me a comprehensive understanding of the body, food, and how they two work together. As I studied physiology, nutritional biochemistry, and the function of food in the body gave me the realization that there is so much false information out there directed at people who want to do better but don’t know how. I sadly realized that much of the effort I put into “perfecting my body to prepare for baby” was unnecessary and did not actually make a difference towards my body’s capability to healthily grow a human. I became eager to help others release themselves from the pressure to be perfect and discover the best way to nourish their own body. 

When you work with me on your nutrition goals, I use all of this education and experience to personalize your experience according to your own particular needs. I understand that each body is different and what works for one person does not work for all people. I will listen to you, your needs, and your concerns and work with you to create a plan to achieve your goal of being a healthier you!

As your dietitian, I will work with you to sift through the weeds of misinformation and guide you to learn how to feed your body without shame, harm, or guilt. All while actually enjoying your food!
